Triple Berry Muffins Recipe
Adapted from Simply Recipes
Ingredients:
- 2 1/2 cups all purpose or whole wheat flour (I use half regular flour and half whole wheat flour)
- 1 Tbsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 2 large eggs
- 1 cup plain Greek yogurt
- 1 tsp. milk
- 1 cup sugar
- 8 Tbsp. melted butter (1 stick)
- 1 tsp. vanilla
- zest of one orange
- 1 1/2 cups fresh blackberries, raspberries, and blueberries (cut in half)
- Preheat oven to 400 degrees. Grease a standard muffin pan or line with paper muffin liners.
- Mix the dry ingredients in a large bowl (flour through cinnamon).
- Mix the wet ingredients in a separate bowl (eggs, yogurt, milk, sugar, butter, vanilla and orange zest).
- Slowly add the wet ingredients to the dry ingredients. Do not over mix.
- Add berries to the batter and lightly fold in.
- Divide the batter evenly between the muffin cup. (recipe yields 18 muffins). Bake for 17-20 minutes, until a toothpick inserted in the muffins comes out clean.
